We buy the freshest, highest quality fish from various sources throughout Cornwall, ensuring that our fishermen use low impact fishing methods that preserve our marine environment wherever possible, closely following the guidelines provided by the MSC (http://www.msc.org) and The Good Fish Guide (http://www.fishonline.org)
We endeavour to purchase mature fish and seafood, and not to take the smaller sized fish. This may mean that the cost of our dishes are slightly higher than other restaurants, but the sustainability of our seas is our priority and this is reflected in our menu and pricing.
We refuse to buy undersized fish, and we trust that our fishermen always hand-pick and measure each and every lobster or crab to ensure any undersized fish that have not reached the minimum landing size, are return to their natural habitat alive.
